I take Creatine for muscles, Glucosamine/Chondroitan for joints, and a multivitamin for general health.I don't worry so much about fat or carbs in particular but instead focus on total caloric intake. I try to eat 225 grams of protein per day and keep my total caloric intake around 3400 calories a day, if I over eat or under eat I makeup for it the next day. I also don't eat things that have no protein or nutritional value like chips, soft drinks, candy, etc... except for ice cream or cookies every once and a while. Right now I'm trying to gain muscle so protein is really important for me. I drink lots of protein shakes, (I like Isopure, and MetRX protein drinks) and eat lots of protein bars (Detour bars are my favorite).

Most of my protein that comes from food is from fish(sushi, canned tuna, grilled salmon), egg whites, steak, and chicken.
